Eoserv is the most flexible at the moment, it's not so hard to set up, there is plenty of the guides how to set up an eoserv.
Seose is closed source, so it's not so flexible. Only way to customize it is just maps, pubs, shops, drops.
Kalandra is the most hard to use at the moment, it isn't finished and half of the source isn't even ready to use on the live server. This is only for those who want to write own emulator etc.
If you want a server, which is flexible go for Eoserv.
If you want a server, which is easy to setup, maintain and customize go for seose.
Edit: I am not aware which revisions works well and which does not.
I am not aware of customized revs either. I am not following peoples work pretty well.
All I can say that EO Vodka is almost a replica of EO.
