I have no idea on how to setup a server with Linux using Ventrilo.

My opinion: 

Skype: 

Pluses:

Easy program to use
User friendly
Sound quality

Minuses:

Pretty heavy program, uses a lot of processor and RAM.

Ventrilo:

Pluses:

Lighter program than Skype
Sound quality is better than on TS
User Friendly

Minuses:

Lag (You need pretty good server to deal with the lag)
Ventrilo server is VERY heavy program!

TeamSpeak:

Pluses:

The lightest program of these three
Sound quality is moderate
Light server

Minuses:

Not so user friendly
Nerd program basically (My favorite<3)

OVERVIEW:

Skype is the best choice for all these people, because it is so user friendly!
TeamSpeak isn't so user friendly, but it's pretty light program.
Ventrilo is user friendly, but it's has pretty bad sound quality and it needs powerful computer and lots of bandwidth to host the server.

I only have a shitty connection so unfortunately we have to stick to something that can run with a moderate amount of people. TeamSpeak allows for multiple rooms that would stop so much problems.

My opinion is that it is rather easy to use as long as someone gives you clear to read instructions. We had a few people in a test server that I left running last night on this Laptop and we only ran into a few problems. There was complaints of sound quality but all in all it ran and we got people in with minimum effort at all.

I'm speaking to sblord about it as we speak. And hoping to have a domain name brought and a sever setup by the end of the night.

Well, you are right, if you guide people how to use the program and join the channel, it won't be so hard after all.
If I remember right... You can rise the quality of the sound on server properties.

Web developer, currently looking for graphic artists / designers.

It won't be the best quality, but I could until someone else comes on. (4 bars of wireless atm, goes between 3-4)

I now have a microphone but need to install Skype on my PC. I will edit this post or make a new post if someone else posts after me stating that it's installed. Using WI-FI but i'm near the router. I should really move to cable soon.

Yes, toocoolforaname has setup a TeamSpeak server and it doesn't lag. It is already setup and easy to use. We can post instructions on here if need be.

Want to let everyone know that the Skype meet has turned out to be an incredible success so far. What was to be a one day limited event has now turned into a daily occurrence, and that's only the beginning of what it's achieved.

EOSERV members have made use of audio and text chat to get to know each other beyond the keyboard. It's restarted collaboration and social gatherings that we haven't seen since the early days of EOHax.

Reforms have started here on EOSERV as a result of it. Such concepts as improvements to the website and community forums originated from discussions over Skype. The concept of a Trusted Server Metrics Program was planned on Skype over the course of a few days. Ideas and discussions regarding the formation of new servers has originated from roundtable discussions between members, artists and developers.

It has made the largest positive impact within the community in years. I have a feeling that the concept of audio conferencing between members and staff will be a crucial component of EOSERV for quite some time.

On a sidenote, plans to move the discussions to TeamSpeak have not yet originated. So far we have worked out a system incorporating Skype that seems to be fulfilling our needs, and plans to transition away from it have been halted as a result.
