Wouldn't a CNAME only work for a pre-existing (sub)domain? To my knowledge, only A records can point directly to an IP, but I could be wrong on this.

Yes it does but some people have dynamic IPs and it's just easier to cname your no-ip/dyndns domain than constantly updating the A record.
